Pairs With: Bourbon
Flavor Profile: Plum + Chocolate + Tea
This one was inspired by a cocktail we had while visiting the Rabbit Hole distillery a couple of years ago. That cocktail featured tea and plum wine, a flavor pairing that propped up but didn't overpower the spirit.
With Plum and Tea as our focus, we wanted this cocktail to have a richness to it, which would lend itself to a fall and winter drink. Plums have a sweet, yet earthy flavor so we decided that dark chocolate would complement the plums nicely. The chocolate would also add some tannins that would run along side the dry tea base. A touch of aromatics from the cocktail bitters effectively season the cocktail, binding together each component and bringing out it's flavor.
This cocktail is bold, poised, and spirit forward, which are all things we are really into during the fall and winter months when we seek cocktails that have a depth of flavor that lingers on the palate.

Instructions: In a mixing pitcher, combine 2 oz Bourbon, and 2oz Down the Rabbit Hole Cocktail Mix. Fill with ice and stir until cold. Strain into a rocks glass over one large cube. Garnish with a lemon twist.
